spContent=本课程以水产品加工工艺为主,涉及水产品加工原料、水产品的安全性等相关内容。水产品加工原料全面介绍了各类典型的水产品,并结合水产化学方面的知识,归纳水产品加工原料的特点、化学组成及其在加工及贮藏过程中的变化。水产品加工工艺较为系统地介绍了各种水产加工制品的加工工艺、包括冷冻制品、干制品、鱼糜及其制品、罐头、海藻等。

课程概述

我国是渔业大国,近几年全国水产品总产量一直在6500万吨左右,水产品加工是提高水产品综合效益和附加值的重要途径,优质水产品通过深加工可以有效提高产品品位,低值水产品通过深加工既可以增加营养源又能够提高综合利用率。全国目前拥有水产品加工企业近万家,主要分布在沿海地区省份,本课程可作为沿海地区高校食品科学与工程本科专业的一门专业必修/选修课,通过本课程的学习,使学生掌握水产食品加工与贮藏的基本原理、主要水产食品的加工工艺和水产加工食品的质量控制方法及贮藏方法,为今后从事水产食品加工技术与管理工作打下良好的基础。


China is a major fishing country, with a total output of around 65 million tons of aquatic products in recent years. Aquatic product processing is an important way to improve the comprehensive benefits and added value of aquatic products. High quality aquatic products can effectively improve product quality through deep processing, while low value aquatic products can increase nutrient sources and improve comprehensive utilization through deep processing. At present, there are nearly 10000 aquatic product processing enterprises in China, mainly distributed in coastal provinces. This course can be regarded as a compulsory/elective course for undergraduate majors in food science and engineering in coastal universities. Through the study of this course, students can master the basic principles of aquatic food processing and storage, the processing technology of major aquatic foods, and the quality control and storage methods of aquatic processed foods, To lay a solid foundation for future work in seafood processing technology and management.

成绩要求

1、学习全部视频内容并积极参与讨论。

2、及时完成所有单元测试和单元作业。

3、完成最后的期末考试。

4、本课程满分100分。具体包括四个方面:单元测验占40%,讨论占10%,考试占40%,作业占10% 

 评分细则:

单元测验共发布4次,全部是客观题,在规定的时间内测验完成,实际打分后平均再折算回总分;

 

讨论在课堂内开展,计分为课堂活跃度,在课堂交流区内有效回帖3个以上能获得满分,其他讨论区不计分,有效回帖跟论题有关,不能是“收到”之类;

 

期末考试是指Mooc里的期末考试,整个Mooc里的分数算平时成绩,占一定比例,实际的期末考试回校后再操作;

 

作业总共发布1次,要求按期提交,教师批改;

 

旷课、迟到扣分由所有Mooc总分出来后再减分,旷课每次减5分,迟到每次减2分,课堂抢答环节也由慕课成绩出来再酌情加分。

4. This course has a maximum score of 100 points. Specifically, it includes four aspects: unit tests account for 40%, discussions account for 10%, exams account for 40%, and assignments account for 10%.


Scoring rules:

The unit test was released four times, all of which were objective questions. The test was completed within the specified time, and the actual score was averaged and then converted back to the total score;


The discussion is conducted in the classroom, and the score is based on classroom activity. If there are more than 3 effective replies in the classroom communication area, a full score will be obtained. Other discussion areas will not be scored, and effective replies are related to the topic and cannot be "received" or similar;


The final exam refers to the final exam in Mooc. The scores in the entire Mooc are calculated based on the usual grades, accounting for a certain proportion. The actual final exam will be conducted after returning to school;


The homework will be published once in total, and it is required to be submitted on schedule. The teacher will correct it;


The deduction for absenteeism and tardiness will be based on the total score of all MOOCs, with a deduction of 5 points for each absenteeism and 2 points for each tardiness. The classroom quiz will also be based on the MOOC score, and additional points will be added as appropriate.
